
Capstone
Sustainable Seafood Alternative
Over the course of the second year of the MMB program, students work on a group capstone project. The goal of this project is to research and develop a theoretical biotechnology-based business concept. This includes identifying an unmet need, market, target customers, revenue streams, outreach channels, conducting interviews with key opinion leaders, and more.
For my group's project, we chose to research cell-cultured octopus as a cruelty-free alternative to wild-caught octopus, especially as research into cell-cultured foods and interest in sustainable alternatives continues to grow. We retain a line of communication with our mentor, a life-science industry professional, who helps guide our thinking and provides valuable insight towards areas we are less familiar with.
